In my life as a chef, my first great adventure has been the Vivir line of snacks. The creation of these recipes and the designing of the packaging (along with an excellent graphic artist) is my favorite part of the work. The creating!

As some of you know, I have been working on my first raw food cook book. The project keeps getting bigger as I do not seem to stop creating new recipes. These new recipes then need further exploration before introducing them. And then of course, there is the photography. These foods are quite beautiful, and as you will see, the book is full of incredible photos. I think when you have a passion for creating, beauty abounds on all fronts.

In the past few months I have been creating a wide variety of raw foods for those for whom I do personal chef work. This has certainly tweaked my Café funny bone and I am quite certain that a café is coming… sooner rather than later. It’s funny how once you start on the path of creating, it keeps growing. Stay tuned, and in the meantime,

EnJoy!

Come as early as 6:00 pm, Chef Pamela Gilles of Vivir Living Foods is preparing a lovely raw meal for those wishing to buy their dinner, or you can bring your own dinner if you choose. The concert will be on the back lawn so bring your concert seating or blankets and enjoy a picnic dinner before the music.

Chef Pamela is planning a dinner of nut burgers and mango pudding tarts- perfect for a picnic on the lawn. Imagine a lovely summer evening, relaxing with your friends by the koi pond, eating a nutritious delicious dinner followed by sweet angelic music. Treat yourself!

Music is powerful. And in the hands and heart of this musician, our walls melt and the room becomes one. Come join in this fun and moving evening program of music and connection with lots of opportunity to participate and sing along It’s always an in-the-moment event, with Charley listening for which song he is guided to play next. In the second half Charley will switch gears and lead us in a short spiritual workshop exercise to take us deeper into who we are and see that in each other. Amazing moments are available in this experience, and in a very brief time you may even feel that sense of inner connection that usually comes only after attending an entire weekend retreat! Charley Thweatt brings his gifts of warmth, humor, presence and ease to any gathering. He has been a favorite with Unity groups since the early 80′s, when he took a leap of faith from his budding architecture career into touring full time with his spiritual concerts and workshops.

Charley has a talent for turning a room full of strangers into connected family, by sharing his original music, his angelic voice and his insightful workshops. He has been a presenter for spiritual organizations and metaphysical conferences for 25 years, throughout the U.S., Canada, Europe, Australia, Fiji and Japan. The biggest influences on Charley’s spiritual path have been Unity, A Course In Miracles and seven years of touring with Alan Cohen’s workshops and retreats. Charley has also been the musical opener for such other luminaries as Wayne Dyer, Marianne Williamson, Deepak Chopra, Ram Dass and Louise Hay. He has appeared on national television and radio with his songs, with such titles as You’re an Angel, Take Your Power Back and Dancers in the Light.

There’s more to life than chocolate, but not right now.
—Anonymous

The botanical name is theobroma cacao, which, roughly translated, means “food of the gods” or more literally. “God food.” We use only the finest Ecuadorian organic cacao, considered worldwide to have the finest floral aroma and flavor profile, as well as, the highest amount of bioavailable nutrients and minerals. Our cacao is from un-hybridized plants which maintains the highest and truest quality of this Arriba Nacional-Fino de Aroma heirloom variety.

Our source employs meticulous organic farming methods, advanced sustainable technology, and the practical knowledge of Old and New World chocolatiers to present you with the finest cacao products. The farmers nurture the trees, hand pick the cacao pods, and separate the beans for fermenting. After a carefully controlled fermentation process, the cacao beans are sun dried. Unfortunately, many companies have been known to dry their beans in ovens in order to reduce their costs. After this detrimental process, you end up with beans that incur a disappointing “acid flavor.” Not ours. It’s melt in your mouth goodness. We also use cacao that is hand peeled, and never machine processed.

Cacao contains Theobromine a weak but effective stimulant and includes substances that are chemically and pharmacologically related to the brain lipids anandamide. The word anandamide is derived from ananda, Sanskrit for ‘bliss’. These N-acylethanolamines in cacao target the endogenous cannabinoid system of the brain, slightly mimicking the psychotropic effects caused by plant-derived cannabinoid drugs either directly (by activating cannabinoid receptors) or indirectly (by increasing anandamide levels in the brain). That’s why it makes you feel so good to eat it! Theobromine also resembles the effect and action of caffeine. But as compared to caffeine, it has less powerful effects on the central nervous system. Great for little boost in the afternoon or after a delicious meal.

We offer Habanero Sesame Crunch Cacao Bark, rich cacao blend with a bold habañero heat embedded with crisped sesame seeds, Popped Raw Almond Cacao Bark, germinated almonds dried with the best Himilayan salt immersed in our elegant raw cacao blend, Glazed Walnut Cacao Bark, an elegant raw cacao blend topped with banana glazed walnuts, Chocolate Covered Cherries, gently dried bing cherries immersed in a raw cacao blend, and Motley Fudge, fabulously fudgy raw Cacao blend.

Try any of our exquisite cacao products above and see for yourself how this amazing ingredient makes our gourmet chocolates feel like you are eating a bit of heaven.

Flax Crackers with Habanero Salsa

Light and lively, with a hint of heat. This unusual and delicious crisp is made from germinated then dried flax seeds. The germination process increases vitamin intake, makes it easier to digest and provides important anti-cancer agents called lignans.

That hint of heat from the habeneros is made from organic, locally-grown peppers. We dry them at low temperatures to keep the nutrients in tact.

They are great in a bowl by the TV so the kids just start munching away or take to the movies instead of eating empty calorie popcorn. Makes a great accompaniment to those Thanksgiving appetizers. These crisps are also great dipped in guacamole, hummus or if you’re feeling creative, drizzle with our Motley Fudge when melted at a low temperature. ORDER BY NOVEMBER 15TH and receive a FREE 1 oz. package of Motley Fudge and enjoy a most interesting crisp!

Good news for salt lovers! Did you know that the human body needs 84 minerals to survive? It’s true. And you’ll find them all in Himalayan salt and it is used in all of our products. No other salt offers these health benefits.

Most people don’t realize that there are enormous differences between the standard, refined table and cooking salt and this natural health-promoting salt.

Table salt is 97.5% sodium chloride and 2.5% chemicals such as moisture absorbents, and iodine. Dried at over 1,200 degrees Fahrenheit, the excessive heat alters the natural chemical structure of the salt. Today’s table and cooking salt is void of the vital trace minerals that make Himalayan salt so precious. This crystal salt has spent over 250 million years maturing under extreme tectonic pressure, far away from exposure to impurities. With chemical dumping and toxic oil spills polluting the oceans at an alarming rate, most of today’s sea salt is not nearly as pure as it used to be. Himalayan salt is pure salt that is mined and washed by hand — with zero environmental pollutants.

The salt’s unique structure also stores vibrational energy. All of the crystal salt’s inherent minerals and trace elements are available in colloidal form, meaning they are so small your cells can readily absorb them. One less thing to be guilty of when eating our delicious vegan chocolates and crisps.

The beautiful flavor of this pure salt enhances all of Vivir’s foods.
